Marqooq is a warm and nourishing traditional Saudi dish, perfect for winter days. It simmers slowly until the flavors deepen and the broth becomes rich and cozy, creating the ultimate comfort food.

Especially comforting for new mothers, this hearty dish gives the body warmth, strength, and energy. Soft thin dough layers combine with vegetables, spices, and rich broth for a complete family meal that warms both body and soul.

Ingredients (Serves 6-8)

Chicken & Broth Base

  • Chicken cut into large cubes (with bones for flavor)
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 4 garlic cloves, minced
  • 3 tbsp tomato paste
  • Salt to taste
  • 2 tbsp mixed spices (Saudi 7-spice or baharat)
  • 2 dried black lemons (loomi)

Vegetables

  • 2 zucchini, thick-cut
  • 2 potatoes, thick-cut
  • 2 carrots, sliced
  • 1 green bell pepper, cubed
  • Red pumpkin (yagteen), cubed
  • Olive oil for cooking

Dough

  • 2 cups whole wheat flour
  • 1 cup white flour
  • 2 tbsp salt
  • Water (as needed)
Dough should be thick and firm to roll thin sheets without tearing.

Step-by-Step Instructions

  1. Heat olive oil in a large pot. Sauté chopped onion, minced garlic, and ginger until golden and fragrant.
  2. Add chicken cubes and spices (mixed spices, salt, black lemons). Cook until chicken is well-coated and browned.
  3. Add 7 cups hot water, tomato paste, and chopped tomatoes. Bring to boil, then simmer covered for 30 minutes.
  4. Add all vegetables (zucchini, potatoes, carrots, bell pepper, pumpkin). Cook until vegetables are half-tender (about 15 minutes).
  5. Prepare dough: Mix flours and salt, gradually add water to form thick, firm dough. Knead 5-7 minutes.
  6. Divide dough into 4-5 portions. Roll each very thin (like pasta sheets), cut into 2-inch squares or strips.
  7. Add dough pieces gradually to simmering broth, stirring gently to prevent sticking.
  8. Cook 20-25 minutes until dough is tender and broth thickens. Adjust salt and spices to taste.
  9. Pour into large serving bowl. Garnish with fresh cilantro and sprinkle of black pepper.
