  5. Cover and cook for 20-25 minutes until lentils and vegetables are completely soft and breaking down.
  6. Remove from heat. Use an immersion blender (or transfer to blender in batches) to puree until smooth and creamy.
  7. Return to low heat. Season with salt, black pepper, and cumin. Simmer for 5 more minutes to blend flavors.
  8. Prepare toasted bread cubes: Cut stale bread into 1/2 inch cubes, toss with olive oil, and toast until golden. Serve soup hot topped with bread cubes.
